Vegan food is the perfect way to enjoy the spoils of summer, because leaving animal products off of your plate leaves more room for the many amazing plants that thrive in summertime!
My vegan summer recipes tend to be hydrating and refreshing, packed with leafy greens, and yet still-satisfying and energy-rich, because my appetite does not go away in the summer! Here are a few of my favorites:
- Use up that metric ton of greens in my vegan saag paneer or vegan kale pesto
- Turn fresh tomatoes into something magical with my roasted tomato sauce, or 30-minute fresh tomato marinara
- Give summer corn a little love in vegan corn chowder or sweet corn curry
- Try a new veggie from the farmers' market and make stir-fried choy sum or cream of kohlrabi soup!
