Vegan MoFo 2014: Legume Appreciation Month

Today is a quick break from regularly scheduled recipes! Since I’m still on vacation and haven’t been able to put together a recipe post, I wanted to give a little introduction to Vegan MoFo and my blog’s theme for the month of September.

Black Bean Chipotle Stew with Pineapple Salsa Verde

Vegan MoFo (short for Vegan Month of Food) is a yearly, month-long celebration of vegan food. Both vegan and non-vegan bloggers participate by blogging as much as they can about vegan food throughout the month. The goal is to post every weekday and flood the internet with vegan awesomeness. This is my second time participating.

For this year, I chose to go with the theme of Legume Appreciation Month. The humble legume is an important part of a balanced vegan diet, and I am paying homage to legumes’ nutritional and culinary awesomeness by celebrating them in recipes ranging from simple to surprising. This month on my blog will run the whole gamut from breakfast to dessert, and I hope it will inspire you to sneak more legumes into your diet! I’m afraid that with my full-time job and marathon training I cannot post 5 times per week (and I’m sure you’d get tired of me at that point anyway). So my goal is to post about 3 times per week instead, which is still a little bit more than usual.

The legume family is larger than you might think, as you’ll find out here throughout September, so I hope you’ll stick around for the both expected and unexpected legume recipes that I have planned. I hope you’ll also check out the other bloggers who are participating – you can find a complete list on the Vegan MoFo website, and there are options to browse individual blogs, or even to import an RSS feed consisting of everyone who is joining this year.

Tomorrow, I will be back with my crowd-pleasing, crock pot (un)refried beans! I’m so excited to get started. In the meantime, here are a few of my favorite legume recipes from the blog:

    LOVE the theme! Such a fantastic idea. I’m especially intrigued to see how you incorporate them into breakfast. In Costa Rica, the national dish is gallo pinto which is rice and beans fried rice style and it’s usually eaten at breakfast….sooooo good. By the way, the Baked Tequila Lime Tofu Tacos with Chipotle Crema sound out of this world. You had me at tequila 🙂

      Thanks, Rachel 🙂 I’ve had (a probably inauthentic version of) gallo pinto before it was awesome!! I’m hoping my breakfast bean recipes will be a little sneakier, but kind of flying by the seat of my pants with the recipes for now =] I agree, tequila makes everything better!

    Oh my goodness, ALL of those recipes look amazing. I thought I was finished with my meal planning for this week but it seems I’ll be making a few changes.. And I can’t believe you’re training for a marathon! You’re such a badass. Just saying. You should change your blog name to Vegan Badass, so we’ll have a Vegan Mofo and a Vegan Badass and…..

    I should cool it on the coffee, eh?
